Veggie Breakfast Burrito


Yesterday I went to town roasting broccoli, cauliflower and Brussel sprouts to go with the chicken I was grilling in the Forman for dinner. I knew I was going to have leftover veggies because I was roasting so many of them. So I starting forming a plan for the leftover veggies and I came up a breakfast burrito.



Broccoli and Cauliflower Breakfast Burrito

1 tsp Olive Oil
1 C Roasted Broccoli and Cauliflower
4 Slices chopped turkey bacon
2 eggs, whisked
1 whole wheat tortilla

Heat olive oil on med high heat in a skillet. Then add veggies and turkey bacon. Cook until heated through about 5-10 minutes. Then add your whisked egg and stir until well combined and egg is cooked. Once cooked place egg/veggie mixture into the tortilla and rolled it up!


You can do this with just about any veggie you have leftover or in the fridge. If you want cheese that can be added too. I didn't add any additional spiced to this burrito because my broccoli and cauliflower was well seasoned when I roasted them the night before with garlic powder, onion powder and pepper.

Best part about this burrito it is 21 Day Fix friendly!

It's snowing and I am bored!

I am trying really hard today to not eat my way through this snow storm!

In the past I would be baking all kinds of yummy treats and stocked my pantry with chips and diet soda. Instead I hardly have anything to bake with in the pantry. I might be able to scrap together enough flour to make blackberry scones. I have no chips and no soda. I had my groceries delivered yesterday and pick up some extra eggs and carrots to dip but that's it.

So now I am like what am I going to do with my hands to keep busy in-between fights and "I am bored" from the kids.

Well I am going to redo a bookcase!

I discovered a new love of redoing/painting furniture that we have in the house and few things we have picked up at Goodwill. This keeps my hands busy and covered in paint so snacking happens only when I hungry not bored.

Here is a collage of the latest project I did over the past week. It is a toy box my husband picked up at Goodwill for $6.

I used Annie Sloan's Old White, dark wax and soft clear wax. I had to use wood filler to blend the bear back into the wood. I also sanded the dark wax before applying and buffing the soft wax.


I LOVE the way it turned out and can't wait to fill it with C's dress up clothes!

Now this is the piece I will be working on so I am snacking my way through the snowstorm!

Spinach Egg Scramble


I made this yummy spinach egg scramble the other day and I wanted to share! I was super easy and the kids even ate it!

We get a weekly CSA (community supported agriculture) and I try to plan our meals according to what is coming that week. We find out on Monday and I pick up on Wednesday. This gives me time to look up recipes or think what I am going to pair with a meal.

We go some fresh spinach and I have been in a egg mood lately so here is my Spinach Egg Scramble.




Spinach Egg Scramble

2 teaspoons of olive oil
1 onion, sliced
4 cups fresh spinach
6 eggs, scrambled
1 teaspoon of garlic powder
Salt and pepper to taste

Heat the oil in your skillet, then once heated add the onions. Cook the onions until clear and slightly brown about 5 mins. Then add the spinach and a cook until bright green. Stir eggs into the spinach and onions. Keep stirring until eggs are cooked. I split this between 6 servings.

I served this with some bacon and a slice of whole grain bread.


If you are tracking your food with the 21 Day fix meal plan. The containers would be 1 green and 2 reds (with bacon) and 1 yellow if you do a carb/starch.

My Why

Last week I had to make a new WHY video for a Coaching At a Glance group my Beachbody team is having this week. This was a challenge for me not because of the WHY part it was the video part. I always feel like I am not making sense in my video. I am not getting my message out. So after ripping off the band aid and posting in the Coaching At a Glance group and then the team group page and several people telling I sounded like I was making sense I have decided to share my WHY video.

What help make my decision to post it today is because today is the day I lost my mom 12 years ago to complications from her diabetes and pancreatic cancer. My WHY has a lot to do with that fact I lost her at 22 and she never got to see so many wonderful events in my life and in my brothers life. Losing her (she was 54) made me realize I need to take better care of myself so I can be there for my kids and their future life events.

I was diagnosed with Type 2 diabetes in October of 2009 and my cholesterol was great. So I was paralyzed with fear of not being around for my son and any other kids we would have. So I joined the gym and started Weight Watchers. I did ok but something was still missing.

Fast forward to 2012 I got healthy because I was pregnant and lost a bunch weight while pregnant because I was on insulin. I had a beautiful daughter I was feeling great eating well. Then the weight crept back on about a year later. I knew I need to make BIG lifestyle changes. I saw a friend doing great with Beachbody and I knew I need to join her. So I did last January and I am glad I did. My blood work has improved since drinking Shakeology and working out regularly. I am have very little weight loss but I lose weight at a snails pace.

I use inches lost, my energy level and what my blood work says to indicate my success and I have been VERY successful over the past year!

Frittata Recipe



I am sure I have posted this before and if I have it just means it is that good!

One of my favorite egg dishes to make is a Bacon, Mushroom and Kale Frittata.

I make this whenever I am not sure what to make for any meal. I have had it for breakfast lunch and dinner. Plus I love it is all cooked in pan and bakes in the same pan.


Bacon, Mushroom and Kale Frittata

4 strips of bacon

1 onion sliced

1 8oz package of mushrooms(I used steak mushrooms)I cut them into smaller pieces

3 cups of Kale chopped

8 eggs scrambled

1 Teaspoon Garlic powder

Salt and Pepper to taste

1/4 cup cheddar cheese (optional)

Preheat oven to 375

Then place the 4 strips of bacon in a skillet and cook.

Once bacon is cooked remove from skillet and place on a plate with paper towel to absorb the grease. Keep the bacon grease in the skillet.

Add your onions to the skillet cook about 5 minutes (until fragrant). Once the onions are cooked 5 minutes add the mushrooms and cook until the mushroom are soft about 5-10 minutes. Then add the chopped Kale and cook until it is cooked down and bright green about 5 minutes.
Crumble bacon and add to the onions, mushrooms and kale in the skillet. Add your garlic powder, salt and pepper and mix well. Then add scrambled eggs to the skillet cook about 5 minutes, add cheddar cheese and then put the oven safe skillet in the oven and bake at 375 for about 30-40 minutes.

Let sit a few minutes and then cut into 8 slices.

Day 1 Insanity Max:30

Today was the first day of Insanity Max:30 and I loved it! It was the craziest 30 minutes of a workout I have even done. I modified 90% of the workout and I am was still huffing and puffing. My max out time was 6:02. That was about the time Shaun T wanted us down on the floor and I needed to take a few seconds before I got down on the floor. I loved that there were water breaks and that I could split the screen. One screen with the group working out and the second screen was just he modifier. That helped me keep focus so I can be sure my form was good. The next thing I LOVE about this program are the food guides. The Nutrition to the Max guild is broken down by the container colors I have been using since the 21 Day Fix came out and I feel in love with that meal plan. It also has a No time to Cook Guide. I am trying really hard not to eat out but with crazy after school schedules it happens. It gives great suggestions to try and what to skip.
I am looking forward to the next 60 days and all the changes that will be happening to my health! Now time to have a one of my favorite shake that I make with Shakeology. Recipe below! Vanilla Banana Peanut butter Shake
One pack of Vanilla Shakeology 1 cup unsweet vanilla almond milk 1 banana dash of vanilla extract 1 tbsp. of PB Fit about 5 ice cubes Put all the ingredients in the blend and blend.
